Dine In/Dine Out With Sue Szterling

Hello! I hope you had a fantastic week! Today's recipe is a great addition for your winter menu and I am sure you will enjoy it; after all, who doesn't like good pasta?

For this week's Dine In recipe, I will teach you how to make the delicious Spicy Penne with Sausage, a recipe for any day of the week or even for a fancy dinner.

Preparation time: 15 minutes

Cooking time: 35 minutes

Perfect partner: green salad

Perfect alcoholic drink partner: Red Wine (I recommend the Yellow Tail Shiraz)

Perfect non-alcoholic drink partner: Apple Cider

Shopping List: Pasta, sausage, mushrooms, bell pepper, pepper flakes, parmesan, eggplant, tomatoes

On Hand: onion, olive oil, dried basil, dried oregano

Money saving tip: You can turn the less expensive stir-brand sausage into flavorful Italian sausage by mixing 1 pound of it with one tablespoon of fennel seeds and 1/8 teaspoon of red pepper flakes. The taste will be exactly the same.

Ingredients (serves 4): listed below

Instructions: Cook sausage and onion in a large deep skillet over medium-high heat until sausage is browned and crumbly; drain. Meanwhile, cook pasta according to package directions; drain and rinse. Heat oil in a large skillet over medium-high heat; add mushrooms, bell pepper and eggplant. Cook until tender, about 5 minutes. Stir in undrained tomatoes, basil, oregano and red pepper flakes. Simmer vegetables stirring occasionally, for thirty minutes. Stir in sausage mixture. Simmer, stirring occasionally, for five minutes. Remove from heat. Add pasta; mix well. Spoon pasta mixture into serving bowl. Sprinkle with parmesan.

Voila! Have a wonderful Italian dinner!

For this week's Dine Out tip, I want to bring up my favorite casual restaurant in town. They have great food at completely acceptable prices, a great selection of beers and wines and an even better friendly environment. They are Buddy's and they are located at 626 E. Lewis, right on the corner of Lewis and 5th street. During the weekends they are opened until midnight, making it very convenient for that "after the movies dinner". They have a full menu with pastas, sandwiches and salads. Their salad is their trade mark and their unbelievable tasting dressing is what makes all the difference; if you go to Buddy's you just have to try a house salad. Now if your appetite is bigger than a simple salad, try their wonderful meatball sandwich and I can guarantee you will leave the restaurant very satisfied! Have fun!
