Hello and welcome back! I hope you all had a fantastic Easter! This past week I had the opportunity to go to a good friend's house warming party, where she served one of the most amazing dishes I have ever tasted, so of course I had to ask her for the recipe so I could share it with you, my dear readers. For this week's Dine In recipe, I bring you the delicious Smoked Pork with Cranberry Sauce.

Preparation time: 15 minutes

Cooking time: 40 minutes

Perfect Partner: baked apples

Perfect alcoholic drink partner: white wine

Perfect non-alcoholic drink partner: ice cold soda of you preference

Shopping list: pork chops, cranberry sauce, tomato soup, onion soup mix, bell pepper, peas

On hand: salt, ground ginger, rice

Money saving tip: To make your own inexpensive cranberry sauce, mix 12 ounces of frozen cranberries, 1 cup sugar and 1 cup water in a pan. Cook until cranberries pop, about 10 minutes; skim off white foam and refrigerate to cool.

Instructions: Preheat oven to 350 F. Spray a large skillet with cooking spray. Cook pork chops over medium-high heat until lightly browned on both sides, about 3 minutes. Arrange pork in a large baking dish. Combine cranberry sauce, tomato soup and soup mix in a saucepan. Cook, stirring occasionally, over medium heat until warm. Pour over pork; cover. Bake about 40 minutes. Meanwhile, combine water, salt, ginger and bell pepper in a medium saucepan. Stir in rice. Bring to a boil; reduce heat. Cook, covered, until rice is tender, about 15 minutes. Remove saucepan from heat. Stir in peas. Let stand, covered, for 5 minutes. Serve pork chops and sauce over rice. Enjoy!!
